Gin
Simple Syrup
Lemon
Soda Water
Add two ounces of gin to a glass of ice. Add one ounce of Simple syrup(Simple syrup is a 50:50 blend of sugar and water. Warm it to make the sugar go into solution, then cool.) Fill the rest of the glass with soda water and the juice of one lemon. Stir and enjoy.
For those too lazy to make the Simple syrup, you can substitute Sweet and Sour for the Simple syrup and lemon. But there really is something to be said about a drink without the high fructose corn syrup.

Pink Mojitos
Rum (white or dark, just not spiced)
Sugar
Mint
Lime
Soda Water
Pomegranate Juice
A Muddler
Put a few mint leaves in a glass along with 1 tsp of sugar, the juice of a lime and a little bit of Soda water. Muddle the mint leaves(your crushing mint leaves with the sugar, it is a great stress reliever after a bad day at the office.) Make sure the sugar is dissolved into the soda water and lime juice. Add ice, two ounces of Rum, one ounce of Pomegranate Juice and fill the remainder of the glass with soda and stir. Garnish with mint leave and lime wedge.

Mojitos
This is quite a refreshing drink, although I still cannot put a dent in my backyard mint plant.

Strawberry Bellini
Strawberry Bellini
Champagne or Sparkling Wine
Strawberries (Fresh or Puree)
Amaretto
Put about three cups of fresh strawberries into a blender. Add two teaspoons of sugar to the strawberries and blend into a puree. (Fresh is always best, but if you must, add two cups of strawberry puree to the blender). Fill blender with ice. Add one cup of sparkling wine or champagne along with a 1/2 cup of Amaretto. Blend into a smooth consistency. Pour into glass and float a layer of Amaretto.
This Bellini is fit for a princess!

Scotch with the Scottman
Scotch
Well our neighbors ventured across the great pond to Scotland for Spring Break. They brought back a few bottles of Scotch. So, for our Friday night cocktail hour, we indulged in a Scotch tasting. I am generally not a fan of Scotch. One of the Islays reminded me of my Human Anatomy cat dissection days. YUCK! But tonight, I did find a 33 year old, Scotch that is, I did enjoy! Alas it is quite expensive and can only be found in Scotland. Well maybe one day I'll get to take a trip over there.
